Ever so often I have major Indian food cravings, and I terribly miss my dad’s cooking. Growing up, I remember wonderful aromas coming from the kitchen every afternoon. I would go in and see my dad chopping, stirring and prepping away, and I think that’s where I developed my love for cooking. My dad always refers to himself as a Look-book Cook! I’m a little different, however, as I look at recipes to inspire me and always make changes along the way. When it comes to adding spices to dishes, I hardly ever follow the recipe, but go according to taste.
I miss being home and eating homemade Indian food, or even eating out at Indian restaurants in Dubai. Restaurants here in California just don’t compare…I do admit there are pretty good ones, but considering the price, I rarely eat Indian food out.
Chana masala is an incredibly easy vegetarian dish to prepare, yet delicious and flavorful. This is my own recipe inspired by watching my parents cook it over the years : )
